Delicious Mac and Cheese

So for the first time in a long time it's girls night at casa de Katy tonight! In preparation, I've been cooking and baking all day, but by far my favorite thing I made was this delicious panko breaded macaroni and cheese as seen on this episode of Food With Dottie by one of my favorite YouTubers, Datev Gallagher. The recipe itself sounds somewhat complicated but it's so easy!

What you'll need:
  • 1 and 1/2 boxes of pasta (I like rotini because the ridges hold the cheese very nicely)
  • 1 stick of butter
  • 4 cups of shredded swiss cheese
  • 2 cups of shredded sharp cheddar cheese
  • 2 cups of panko bread crumbs
  • 1/2 cup of flour
  • 1 quart of milk
Preheat the oven to 375 degrees.

To start out, melt 1-2 teaspoon of the stick of butter in a saucepan.  Once the butter is melted completely, add in the two cups of breadcrumbs, coating them in the melted butter. Then, remove them from the heat and set them aside.

Boil the 1 and 1/2 boxes of pasta and strain the noodles.

In a large pot on medium heat, melt the remaining butter. Add in the 1/2 cup of flour, stirring constantly. Pour in the quart of milk (4 cups) and stir until there are no clumps of flour and butter left. Once completely dissolved, add in the cheese. I use pre shredded cheese from the grocery store to make things easier, and continue to stir until the cheese is melted completely.

Fill a large casserole pan with the strained noodles and pour the cheese sauce evenly over them. I had to stir the noodles around a little bit with a wooden spoon to get them all evenly coated. Finally, add the panko bread crumbs on top, not too thick.

Bake in the oven at 375 degrees for about 30 minutes and enjoy! If the sides of your casserole dish are lower like mine, the cheese may bubble over a bit so it might be smart to put a cookie sheet on a lower rack of the oven if you can. What are y'alls favorite mac and cheese recipes?

Snowpocalypse

Day number two of being snowed into my house! Well, technically not snowed in, but just not daring to go outside. We got the most snow we've had in a long time in Virginia on tuesday night and our school has been closed for two days now and possibly won't open again until monday. *fingers crossed*

Our yard has been completely lost to the snow and it's so deep around the back of the house that I can't even find where our swimming pool starts and ends. Yeah this belle is NOT made for snow and ice! My brother braved the weather to come over yesterday morning and he had to dig his way out of our driveway because the snow just kept deeper and deeper the closer he got to our house. Of course not without throwing snow at his little sister first though!

Thankfully, the only thing on the schedule for me today is enjoying a cup of coffee and spending the morning relaxing on Tumblr and Pinterest. No snow angels for this girl! Happy Thursday to you all, and stay warm!

Wish List Wednesday

I'm so excited to create my first wish list wednesday post!

There are so many products I've been lusting after, starting with the Quit Your Job tank from Island Company. I think it would be so cute for the summer with a pair of denim shorts and some leather flip flops! Not to mention how cute this girl looks with a scarf similar to the Blue Island Hippie Scarf.

I've fallen in love with the Delia Shift Dress from the Lilly spring collection, and I think I might exchange an unwanted christmas present for it once the snow clears out and I have a chance to get to the store!

Now I'm not a big coffee drinker, but I do drink a small pot of chamomile tea almost every night before I go to sleep and the Monogrammed Coffee Mug from Moon and Lola is just to die for! I definitely need one in my life asap.

I know these earrings have been out for a while, but I adore these studs from Kate Spade. My favorite is the translucent blue color! It's so unique, I haven't quite seen anything like them before.

Last but not least I have reaaaally been wanting a monogrammed PFG for boating in the summer. I've thought about buying one and getting it monogrammed at a local shop but Etsy also has some adorable ones as well!

Playlist No. 2

With all the snow making the noise outside my bedroom virtually nonexistent, I'm definitely listening to slower, more chill, and calming music. What have y'all been listening to lately?

Life in the Fast Lane

As I write for this blog, I've started to realize that a lot of my posts are about things that I love but don't really have a whole lot of substance to them. This blog is supposed to be a place for me to share my life with my readers, all of you, even the thick parts of it, so I'm going to try to do that now.

Last year, on the last day of school for the seniors, one of my best friends, who was set to graduate in under a week, handed my yearbook back to me with a message in it that later brought me to tears as I read it in my car. One of his charges to me was to hold fast to my years in the upper school, because they'll be gone before I know it. Well, fast forward to today, I'm honestly just dumbfounded by the way that this year has flown by. With january almost over, I have exactly one month before the spring sports season begins. Once I get back on the water for crew, that 12 week long season seems to pass faster than the blink of an eye, and then that's it. I'm a week or two away from final exams at that point and then it's over.

I hear a lot about how junior year is the worst year in high school, how it's the hardest and the work load is just unbearable, but this year I honestly haven't felt that at all. Maybe it's from my school switching to a block schedule this year or that I'm just really anticipating the college process but my junior year has been somewhat of a cakewalk thus far. 18 weeks of school until the end of the year, minus a week that i'm in France on a french exchange trip, and one for final exams. 16 weeks. Thats all I have left. All we've seemed to be able to talk about as a junior class is college and the future, but I think that in the process we've forgotten about what's happening now. If our present is only filled with thoughts of the future, are we truly living in it?

So here is my charge to myself, and to my fellow juniors: live in the now. Work hard and prepare for tomorrow, but not while letting today slip through your fingers. Take the moments as they come, even the bad ones, because in my experience you'll miss those too. You'll grow up soon enough, trust me, I'm learning that with each passing day, so don't try to speed up the process any more than it already has been. I think the Young Southern Prep sums it up best, "The work never ends, but high school does. Love your classmates, thank your teachers, be good people."

Ins and Outs

Well, January brought about a lot of changes in my life, so here are my "ins and outs" for the month!

In: Clark's desert boots
Out: Sperry's
Yes ladies and gents, I've retired my sperrys for the season! The change in weather brought about a need for some warmer shoes and these classic leather desert boots keep my feet and ankles warm during the icy mornings.

In: Sum It Up by Pat Summitt
Out: Looking for Alaska by John Green
No more fantastic but heartbreaking John Green books for me (for now anyways). I can't wait to start this new book by a truly inspirational and amazing woman and the face of Tennessee basketball!

In: New college experiences
Out: High school drama
Well first off the big one would be taking the SAT for the first time and truly beginning the college process. With every passing day I'm drawing closer and closer to the day I get into my car and drive out of my driveway to head off to my new school and home, with 18 years in my rearview mirror. As much as I love my school and the memories I've made there over the years but I'm ready to move on to bigger and better things.

In: Reign
Out: Gossip Girl
I never thought I'd say this but I've found a show that might rival Gossip Girl. Now not saying I don't love GG but the history nerd in me is obsessed with Reign! The gorgeous men in the cast are also a plus!

In: The Soft White Sixties
Out: Bastille
This San Francisco based band has been on constant repeat on my phone with a sound reminiscent of that of The Black Keys! Check them out here!

You're Only a Day Away

Tomorrow, tomorrow, I'll love you tomorrow... or, maybe not.
As I lay in my bed, typing away at the keys of my laptop, I'm caught somewhere between denial and panic. Tomorrow, at the not so pleasant hour at 8 AM, I will be sitting down to take that dreaded four hour test that most college-bound juniors and seniors take across america, the SAT. *gag*

I can't believe that after hearing about it for years, the day is finally here. Honestly, I think right now is the first time it's really sinking in that I'm halfway through with my junior year. I just vaguely remember my brother taking his first SAT (without preparation, I might add) eight years ago, and the fact that it's my turn is so exciting and terrifying and every feeling in between. The college process is really, really beginning for me now!

Any other juniors out there planning on enduring the test with me? Good luck to all of us, I'm sure I'll need it. And no doubt I'll be wearing my Tennessee sweatshirt for a little extra motivation!

Outfit of the Day!

Jeans: loft
Shoes: Clark's desert boots
Shirt: j. Crew
Sweater: loft
Scarf: H&M
Sunglasses: Ray Bands

The Belle Does College!

Over the past 6 months I've been visiting various colleges in the south and I've attempted to keep a journal with a bit about each school, but in the process of jotting down notes while hearing from different college reps, going to college fairs, and taking actual school visits, that journal went from the organized notebook to haphazard pieces of paper tucked into the pockets of my Lilly planner. Long story short, I thought it would be a good idea for me to organize all of my thoughts in some fashion and why not do it here and share it with you all?

1. University of Tennesse, Knoxville

I absolutely LOVED it! The school is the perfect size for me, the town of Knoxville is so cute, and everyone just loves UT so much. The atmosphere reminds me of a relaxed Charlottesville, but without some of the stuffiness I feel at UVA, which I really like.

The dorms are a good size, definitely bigger than others I've seen. I was pretty much ready to move in the first time I stepped on campus. It's so easy to picture myself there, tailgating in orange and white, singing Rocky Top, going through rush, it just felt like such a good fit! Rocky Top definitely is home sweet home to me!

2. Elon University

Over all, I did not like Elon. My first impression was that the school looked brand new, which made it feel cold and unwelcoming. The school really did feel as small as it was, I just felt so isolated from the rest of the world. Honestly I just knew from the beginning that it wasn't for me. The school has a strong focus on "extended learning" which is through programs like service and leadership and internships and study abroad but everyone going off in their own directions like that really just gave me this very disjointed, and school unity and spirit is definitely something that's important to me. I think I got more of a feeling of a fancy boarding school than a college. Definitely not the place for me.

3. Clemson University
Unfortunately I didn't get any good pictures of Clemson, but the campus is really pretty! I liked it, not like LOVED it but I liked it enough. As a land grant school, the campus is huge and includes a botanical garden and lots and lots of green space around the academic buildings (major plus!). The dorms are a nice size with large closets and from what i've heard, freshman move-in sounds pretty easy with plenty of people willing to help you. I could really tell that all of the students are just so happy and loved there school. I liked Clemson, and could potentially see myself being happy there, but I think my heart still really lies in a big SEC school.

4. University of Georgia

I also loved UGA! (and it was super fun because my cousin attended law school there and volunteered to show me around for the day, as well as accompany me on an official school tour) Athens is like the quintessential college town, full of bars and restaurants and little shops. The downtown area is literally right across the street from campus so you're basically close to everything no matter where you are. The campus is massive, and it's the largest land-grant school in the country, and the grounds are so beautiful and well-maintained! The new buildings on campus are bright and warm and inviting, and over all, the school is a great mix of the old and the new. The sorority houses are all in these gorgeous old southern homes and the football stadium is right in the heart of campus. I think I could rock the red and black, I mean who knows, maybe once a bulldog, always a bulldog.

5. University of Alabama

Really Alabama was everything I thought it would be. There's a huge focus on greek life and Bryant-Denny Stadium towers over the campus. They go above and beyond with facilities for their students and making their time at school as easy as possible.

The campus was beautiful and the Quad was gorgeous. I can't even imagine how it must be on gamedays. It must be insane! The campus, even though it's already massive, is still growing, and it definitely feels as big as it is. Bama is a beautiful school, and I loved it there, but I also have to think about if I would be able to handle leaving my state to go to a school as big as this!

6. Auburn University

I wasn't super impressed with Auburn, but I do have to say that the day I visited I had one of the worst head colds and it was no joke 104 degrees outside, so I haven't ruled it out completely yet. My major reactions were that it felt very country in kind of a redneck way, and that it was beautiful but felt like it was in the middle of nowhere. The downtown area was nice but the off-campus housing seemed very far away from the school and like you wouldn't be able to walk anywhere once you lived off campus. There wasn't a whole lot of green space around campus so it was a little bit of a harsh environment but what there was was really nice. I'm definitely still thinking about auburn.

7. Southern Methodist University

SMU wasn't really on my radar until one of my friends told me I should come stay with her one weekend, and my dad loved the idea having grown up in Dallas. I took her up on that offer during early december, right after they had their celebration of lights, so Dallas Hall was decorated for christmas which was absolutely beautiful! SMU was a small school for me with only 11,000 total students, including grad students, and I really didn't think that a small school was for me, but being right in the heart of Dallas you really don't notice how small it is because there's never a shortage of things to do! All of the dorms and facilities are really nice, they obviously take good care of their students. I'm surprised I loves SMU as much as I did, and it's definitely in my top schools!

I've had such an amazing time on my college search, and I've heard from and seen some really great schools. I'm anxious to being the application process, come fall! If you have advice or questions for me, I'd love to hear from you!

Weekend Warrior

Well this weekend is a crazy busy one for juniors across the country, thats for sure, so what did I do? I locked myself away in the solace of my bedroom with my trusty laptop and SAT prep book, only emerging for an emergency two and a half hour tutoring session with my strange but ever-so-hilarious SAT tutor at 9:00 last night. Fun, no?

Luckily for me my tutor has assigned me some homework for the next 5 days before I take that dreaded test and that includes cramming for vocab, a small handful of practice questions, and even a few 20 minute periods of meditation. Yup, meditation. I told you, this guy is strange! But seriously though, without having been given an assignment to meditate, I probably would have driven myself bonkers with studying.

It feels so strange thinking that five days from now I'll actually be taking the SAT. Like, you always hear people talking about it and it seemed so far-off really up until last night when I was given a final pep talk. I feel as prepared as I possibly can for someone who has never taken the test before, and with the schools that I'm applying to I really don't think I have anything to worry about (I mean the average score for Tennessee is like 1190), but I still can't help but feel a little bit of anxiety going into it, and I think that's normal... or at least I hope it is. How was y'alls experience with the SAT, or the ACT for that matter? Any advice for a first-time test taker?

The Belle in Pearls takes Blogspot

She's at it again... Yes, yes I am. For a while now I've been struggling to use wordpress as my major content-blogging platform, but after months of struggling to make it work, i've decided to give Blogspot a try. Fingers crossed, this technologically challenged belle will hopefully be able to figure it out this time around! Wish me luck y'all!
